Fiddleheads: species, preparation and nutrition
Food identity, the scope of available data and the calculation that can be supported.
Identify the food before calculating
Fiddlehead describes a growth stage, not one interchangeable edible species. Do not use a generic fern record to identify an unknown wild plant. Raw or undercooked fiddleheads have caused foodborne illness; preparation and species matter.
Match the weighed serving
Use a verified edible product and the matching prepared state. Weigh edible material after discarded parts are removed. Brined, boiled, dried and fried products are not interchangeable. Count oil and additions separately. A raw nutrition record does not recommend raw consumption.
Continue with your own food
Match the edible part, preparation and nutrition basis. Use your own package or receipt when it describes the actual food. Missing values remain unknown.
